I’m sure you guys have been thinking, “Why the sudden burst of soups and smoothie posts?!?”… Let me help you with the answer! I managed to overexert in the gym and landed with over-worked muscles and a pinched nerve. Ugh! Hate those!

I could barely feel my neck, shoulder and turning/bending my head was a task…with the pain running in all possible directions. I haven’t been sleeping well and was anything, but in a mood to cook elaborate meals, hence soups and smoothies came to my rescue. Thankfully, I feel better now and I’m all set to party with Angie and the rest of my buddies at Fiesta Friday!

Like my friend Jhuls of “thenotsocreativecook“, I’m crazy about bite-sized, mini, easy to serve,finger foods. They are so cute. I find them more presentable than regular portions. This week I decided on “Quesadilla Bites” for Fiesta Friday! 2 Fillings and 2 different ways to serve them 😀 This is how I made them!

Recipe

Mushroom & Spinach Quesadilla – Makes 8

Ingredients

1 tsp Olive Oil
2 tsp Butter
2 cloves Garlic, minced
8oz/ 250gms Mushrooms, cleaned and sliced
2 cups Fresh Spinach Leaves
1/2 cup Shredded Cheese
Salt & Pepper to taste
3-4 Tortillas/Flat Bread / Roti (quantity depends on the size available)

Method

1. Heat oil in a skillet over medium heat and add butter. Once the butter melts, add mushrooms with salt and pepper to taste. Cook over medium high heat until the water evaporates and until caramelized. Add a few more drops of oil, if required and add the minced garlic. Cook the garlic until the raw smell disappears. Mix mushrooms and garlic well and remove on an absorbent napkin/towel.

2. Add spinach to the same skillet, sprinkle with salt and pepper and give it a quick stir, just until wilted. Remove from heat and set aside. In the mean while, using a cookie cutter(biggest size available), cut out the discs from tortillas.

3. Assembling the Quesadilla :-
Skillet Method : Heat a separate skillet/pan over medium heat and apply/spray some oil. Lay the cut out discs on the heated skillet and layer with cheese on the full disc, spinach& mushroom only on one half. Cook until the cheese starts to melt and then fold the disc into half with the cheese covering the spinach and mushroom. Flip and cook until lightly brown on both sides.

Grill Machine : You may fasten the cooking and serving process by assembling the quesadilla as shown below, fold it into half and grill using a grill machine. The filling can be placed on one half for this method of cooking.

4. Serve warm with some pico de gallo, homemade Salsa, Guacamole and with a side of homemade tortilla chips! Oh my! the cheesy goodness ❤ YUM!

Recipe

Tomato,Spinach & Basil Pesto Quesadilla – Makes 8-10

Ingredients

1 Tomato, thinly sliced
1/4 cup Basil Pesto
2 cups Fresh Spinach Leaves/Wilted
1/2 cup Shredded Cheese
3-4 Tortillas/Flat Bread / Roti (quantity depends on the size available)
Oil as required

Method

1.  Using a cookie cutter, cut out the discs from tortillas/ rotis. 2 discs will make one bite.

2. Assembling the Quesadilla :-
Skillet Method : Heat a skillet/pan over medium heat and apply/spray some oil. Lay the cut out discs on the heated skillet and layer with basil pesto, cheese, tomato slice, spinach & some more cheese. Cover with another disc coated with pesto. Cook until the cheese starts to melt and flip carefully. Cook until lightly brown on both sides.

Grill Machine : You may fasten the cooking and serving process by assembling the quesadilla as shown above and grill using a grill machine.

Serve these bites with some homemade Salsa, Guacamole & with a side of tortilla chips!

Tips

1. Do not overload the quesadillas with stuffing as the chances of the filling oozing out, because of the size.
2. Add/ customize fillings to suit your taste buds.
3. Grill machine comes handy and helps hold the filling well.
4. Leftover rotis can also be used to make these tortilla.

  1. Yay! Thanks a lot for the mention, Sonal. I am happy that you still remember that I love bite-sized foods. 😀 I think we all do.
    Glad to hear, too, that you are feeling better now. I wish I have the time to hit the gym as I reached my maximum limit of weight. 😦 Unfortunately, I am too tired from work during weekdays and the clothes are waiting for me during the weekends to be washed and iron. Anyway, I am doing light workout after work at least thrice a day. 😉
    Anyway, enough of my chit-chat and let me enjoy these cuties. 😀 Thanks for sharing, Sonal. Have fun at the party. xx
