This is how I made ’em!

2 large Egg Whites ( Approx 6 tbsp/ or 1/3 Cup)
1/2 Cup All Purpose Flour/Maida
1/2 Cup Fine Sugar
1 1/2 tsp Vanilla Extract
1 tbs Water
Fortunes – Types/Handwritten
Chocolate Chunks/chips (optional)
Sprinkles (optional)
Food Color (optional)
Oil Spray


1. Pre-heat the oven to 375ºF / 190ºC. In a bowl, sift together all purpose flour and sugar. Mix well and set aside.

2. In another bowl, whisk together egg whites, water, food color(if using) and vanilla extract. Whisk until the eggs are slightly fluffy & frothy.

3. Add the flour+sugar mixture to the egg white mixture and combine well. Make sure there are no visible lumps and the batter is smooth. The batter consistency will be slightly thicker than pancake batter consistency.

4. Spray oil on the cookie sheet. Pour 1 tbsp of the prepared batter on the cookie sheet and spread using the back of the spoon. Spread the batter to form a thin 3.5″ – 4″ diameter circle.

5. Bake in the oven for 6-8 minutes or until the edges turn brown. Remove the cookie sheet and place it on a heat resistant surface. Be careful the sheet will be hot.

6. Using a spatula carefully  remove the cookie, flip it  and place it on the working surface. Gently place the fortune in the center of the cookie and fold the cookie into half. Immediately place the cookie on the rim of a glass and press the edges down to shape the cookie.

**Note- This is the step deciding the fate of the cookie. You have to be quick here- if the cookie cools down, it will harden and can’t be shaped. The cookie sheet and cookie will be HOT- please be careful.

7. Place the shaped cookies in a muffin tin to further cool the cookie. Lightly spray the cookie sheet again and proceed with the rest of the cookies.

8. For Chocolate covered cookies – Melt the chocolate chunks/chips in the microwave or using a double boiler, until chocolate melts completely. Do not over heat. Lightly dip the cookie in the melted chocolate. It is best to hang the cookies on the glass rim until the chocolate dries up.

9. For patterned cookies, add food color to a part of the batter and using a piping bag/bottle drops, make patterns on the spread out batter on the cookie sheet, before baking.

1. Start with making one cookie at a time. This will give you chance to test the batter & practice the technique of folding the cookies. I started with one cookie & later managed 3 cookies at a time. Two cookies at a time is a safer bet.

2. The above ingredients will yield about 18-20 cookies, depending on the size. You might end up spoiling a few out of these, till you get the hang of it.

3. If the batter spread out is thick, the cookies won’t be crisp. If the cookies lose their crunch with time – pre-heat the oven to 350ºF, once heated, turn off the oven and place the cookies inside for 5-10 minutes, to achieve the desired amount of crispness.

4. The idea is to have fun with the cookies – Add sprinkles, chocolate, colors, patterns! Just have fun! Make your Mom, Dad, Sister, Brother…. friends… feel special!

5. The fortune messages can be typed or hand-written.

  2. These are SOOO cute, what a perfect feature for Fiesta Friday! I’ve always wondered how to make these at home and now I have the perfect resource 🙂 I love that one of the fortunes says Fiesta Friday, AWWWWWWWWWWW! Definitely cute and perfect for Valentine’s day!!

  5. I LOVE love LOVE these- I am making them for Valentine’s Day!! I have thought about making them with my pizzelle press but I didn’t know how to fold them (except quickly!). What a great post!! Your Fiesta Friday fortune is adorable too ❤ 🙂 Josette
